Pumpkin Pie Bites

Cute and fun for Halloween or Thanksgiving!

Pumpkin Pie Bites

2 refrigerated ready-to roll pie crusts

8 oz. cream cheese, room temperature
1/2 cup sugar
1 cup canned pumpkin
3 eggs
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
Pumpkin-shaped cookie cutter

Optional
1/2 cup chocolate morsels
vegetable oil
re-sealable plastic bags

Preheat oven to 350 degrees.
Use cookie cutter to cut 12 pumpkin shapes from each pie crust. You will need to roll the dough thinner than it comes out of the box.
Press dough shapes into a 24 cup mini muffin tray. (Make 12 at a time, alternating cups to make sure pie crusts don’t overlap each other.)
Apply egg whites from one egg to the top edges of each pie.
Mix cream cheese, sugar, canned pumpkin, remaining 2 eggs, vanilla and pumpkin pie spice together until thoroughly combined.
Spoon mixture into each pumpkin-shaped pie crust.
Bake for 12-15 minutes.
Remove pies to cool and repeat with second pie crust. Place the muffin tray in the freezer to cool it quickly for re-use.

Makes 24 pies. Keep refrigerated.

To decorate, melt chocolate in a heat-proof bowl in the microwave on medium. Heat in 30 second intervals, stirring in between until melted. Add a little vegetable oil to make the chocolate more fluid. Transfer to a re-sealable plastic bag and cut the corner off. Drizzle or draw faces on pies.

Note: The cutter I used was 3 3/4 inches wide, but if you don’t have one, don’t worry. Just use a round cutter around that size or slightly smaller to cut circle shapes out of the dough. Then make stems with the scraps. Press each stem over the edge and down the side of the dough before filling.

Pumpkin pie spice is a mixture of cinnamon, ginger, nutmeg and allspice.

Wall Color and Room styles

I'm not even sure now where these came from, I just saved the pictures... but in these first ones I love the style of the room, and especially the shade of blue. I've been anti-blue wall paint but I really like this color... maybe it's with the strong red accents and white furniture...

I also really like the combination of color, the light and bright blues with red and orange...

I just like the style of this room, like a vintage little girl's room...

Cowgirl Cookies

Cute gift idea, and way to spiff up a cookie mix!

Found at: http://bakerella.blogspot.com/2009/08/mix-things-up.html

Start with a 1 quart smooth Ball jar. Found at Hobby Lobby craft store.

Layer the ingredients in like this:

First: flour, baking powder, baking soda and salt
Second: oats
Third: m&ms
Fourth: chocolate chips
Fifth: brown sugar
Sixth: white sugar
Seventh: chopped pecans

Pack each level down really tightly. I mean it. Pack it in. Or else it won't all fit. Also, I added the chopped pecans last, because if the ingredients were too much or not enough, then I could add more or less pecans to adjust. I'd rather sacrifice nuts than chocolate, you know. The ingredients should be flush to the top of the lid when you seal it up.

RECIPE:
Cowgirl Cookies

1 1/3 cup all purpose flour, spooned into measuring cup & leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup m&ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 - 1/2 cup chopped pecans

Stir all the dry ingredients in a large mixing bowl.

Add

1 slightly beaten egg
1/2 cup butter (melted slightly in the microwave)
1 teaspoon vanilla

Mix wet ingredients into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated.

Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350 degree oven. I got about 26-28 cookies out of these.

Baby catch-all bib

Make it yourself baby bib!

She used: upholstery fabric, another 2 fabrics for the letter, and iron on vinyl.

She also just folded the bottom and added snaps for easy clean up! (Look so much nicer than digging food out of a pocket...)

Super cute for holidays and parties (or both!)

Christmas Mice (or they could be varied- change the holly to something else, and used for something else)

Or they'd be super cute for a Cinderella themed party

Thanksgiving Turkeys

Oreos, Reese's, small whoppers, candy corn, frosting that sets fast

Easter Nests

Chow mein noodles, marshmallows, butter, candy eggs

Party Monkeys

Chocolate frosted cupcakes (could probably use reeses cups too), nutter butter cookies, vanilla wafers, m'n'm's, and colored gel tube frosting

Halloween party food

I stole these straight off of Charmagne Layton's photo album on Facebook of their Halloween party last year (2008,) just cause they are such cute ideas, someday I want to use some of them for a rockin Halloween party! Plus, once again, who actually looks at this besides me??
